Bread Baking Training: Empowering Communities through the use of locally available ingredients, using sweet potatoes and avocados as an example

AgrarKontakte International (AKI) e.V., the foundation Bread against Misery and the St. Camelius brothers as local project partner organized a one-week training on innovative bread baking. 12 participants from the Camelius brothers and sisters as well as invited external persons took part in this training.

The objective of the training was to bake bread using locally available ingredients to empower the local community. This makes bread affordable for even more people from the lower- and middle-income groups. Oliver Flodman from the foundation Bread against Misery, a recognized expert in bread baking spearheaded the training, leaving a lasting impression on the participants. He developed and experimented with various ingredients available locally such as sweet potatoes and avocados. Mr. Flodman said “the training was well organized, and the participants were highly motivated. We are thankful for the support from AKI, and we look forward to continue our collaboration”.

Bread baking with sweet potato and avocado bread was successful and was appreciated by the consumers, who bought the bread.

A consumer acceptance study of such new bread varieties was undertaken by the master student Ms. Alice Karerwa in collaboration with the university of Bujumbura. The master student interviewed the consumers. The study showed that 80% of the respondents found the bread with sweet potatoes very good and affordable.  

Teaching materials that cover bread baking techniques and recipes in English and Kirundi (local language in Burundi) will be prepared. This ensures that the knowledge and skills acquired during the training can be disseminated widely among the local population, fostering self-sufficiency and economic empowerment. The responsible team will organize trainings on bread baking twice a month.
